Fried rice is always my choice when I need a quick meal. It's easy to make and you just need to use simple ingredients available at home. However, several times I felt that making fried rice was quite complicated. Especially when I'm pressed for time. You have to peel and grind the spices, sauté the filling ingredients until cooked, and taste many times to get the right taste.
After testing many times, it turns out that fried rice can also be made in a more practical way. It takes less seasoning, less time, and tastes no less delicious.
1. Use overnight leftover rice
Cooking fried rice is practical, it means you don't need to cook rice first. Just use overnight rice that is left over and hasn't been eaten. This leftover rice is cold and the texture is a little hard. However, it can actually make your homemade fried rice even tastier. Because the rice is not easily mushy and destroyed when cooked.
2. The basic spices are simply sliced
Indonesian fried rice has basic spices of shallots, garlic and red chilies. These basic spices are usually mashed or pulverized, added with shrimp paste, and only then sautéed. It is believed that grinding the basic ingredients can make fried rice delicious. But if you need fast food, this method is less practical.
As an alternative, you only need to slice the basic spices into thin slices. Then, immediately sautéed until wilted and fragrant. This method really saves time for grinding and washing cooking utensils becomes less. Apart from that, sauteed sliced shallots can also give a savory and delicious taste like fried onions, you know.
3. Sauté the spices with margarine
After being sliced thin, the basic spices are then sauteed until wilted and fragrant. If you usually use cooking oil, try replacing it with 1 tablespoon of margarine. By using margarine, cooking fried rice can be more practical than using oil. In addition, margarine also gives a savory taste to fried rice. 4. Add fast-cooking stuffing or side dishes left over from the night before
What's called fried rice, it will definitely taste even more delicious if it's given a variety of fillings as a side dish. However, the addition of this stuffing should not make the process of cooking fried rice more complicated. Just use fast-cooking ingredients like sausage or corned beef.
You can use last night's leftover dishes, you know! Like fried chicken or empal which can then be shredded. Or meatballs and bakwan which can be sliced before being added to the fried rice.
5. Use oyster sauce and soy sauce for seasoning
After the side dishes are sautéed with the spices, add the rice and stir until well blended. Then, add additional seasonings that will make the fried rice taste more complex and delicious, namely oyster sauce and sweet soy sauce.
This oyster sauce gives a savory taste to the fried rice and also a delicious and fragrant aroma. Meanwhile, sweet soy sauce gives a sweet taste and beautiful color to fried rice.
Adding oyster sauce and sweet soy sauce to fried rice doesn't need much. Just 1 tsp and 1 tbsp each, so it's not too salty or sweet. With this oyster sauce and sweet soy sauce, you no longer need to add salt, sugar and pepper. Practical, right?
